Sunny Savory Sweet Potatoes
I’m in love with sweet potatoes. It doesn’t take much to make them good as well as enjoy. I always try to have the kitchen stocked with them and love the smell of sweet potatoes baking away in the oven. Here’s a simple savory way to prepare them:
2-4 medium peeled and sliced sweet potatoes
2 cloves of diced garlic
2 tbs. extra virgin olive oil
2 tsp. of cumin
1 tsp. of sea salt
1 tsp. of pepper
sprinkle of fresh parsley
Preheat the oven to 400 degrees. In a medium bowl, mix in the olive oil, garlic, cumin together with a fork. Then add in the sweet potatoes and mix together well. In a baking dish, place and spread out the sweet potatoes as well as possible. If you sliced up to 4 sweet potatoes, you can bake them in another pan. I like to slice them about 1/4 inch thick. Sprinkle on sea salt and pepper, then top off with fresh parsley. Bake for 20 minutes or until sweet potatoes are tender and a bit crispy on the edges. Serve as the main or side dish!
